Mini King Cake


Mini King Cake

Makes 4 small cakes

Ingredients

1-2 sheets puff pastry

4 Tbs cinnamon

8 Tbs sugar

2-4 Tbs unsalted butter (melted)

1 cup powder sugar

2-4 tbs hot water

yellow sanding sugar

green sanding sugar

purple sanding sugar

1 tiny baby (or fun trinket to place in a cake)

Directions

Pre-heat oven to 400 degrees.

Roll out the puffy pastry.

Using a pastry brush, brush on melted butter to the puff pastry.

Stir the sugar and cinnamon in one bowl and sprinkle generously on the melted butter on top of the puff pastry.

Roll up the pasty.

Leave less than an inch from the top and cut in half all the way down.

Then open the layers up and criss cross them.

Tie the dough into a knot.

Brush with a little more butter.

Bake for 15-18 minutes till lightly golden brown and baked all the way through.

Cool.

In a bowl, add the hot water to the powder sugar. If it is too thin, add more power sugar. If it’s to dry add a Tbs of hot water at a time till the perfect frosting.

Drizzle the frosting on top of the cakes.

Then generously sprinkle the three colors of sanding sugar in three sections.

Place cakes on plates and add one tiny trinket to one of the cakes to resemble the gift in the cake. Most of the time it’s a tiny baby. But you can make it your own.
