Bunny Cake


What you will need:

1 round cardboard

1 8” pre-made vanilla cake

serrated knife

off-set spatula

2-3 cups shredded coconut

1 bag of edible green grass

1 pink or red gummy candy (for the nose)

1 beige construction paper

1 light pink construction paper

1 bunny ears template

glue stick

vanilla buttercream

1 1/2 cup unsalted butter

3 cup powder sugar

2 tsp vanilla

2-4 tbs half and half

Directions:

Start off by making the buttercream. Cream the butter in a Kitchen Aid or with a hand held mixer till it becomes smooth. Make sure to scrape down the sides of the bowl.

Add the powder sugar. Mix until all the ingredients are incorporated. Again, make sure to scrape down the sides of the bowl.

Add the vanilla and half-and-half.

Blend till smooth.

Take the 8” pre-made cake and slice the top off to make it flat. Then cut it vertically in half.

Using the off-set spatula, place a scoop of buttercream on top of one round half.

Then place the other half right on top.

Place a little buttercream on the bottom of the cake then place upright on the cardboard.

Then with the serrated knife cut a triangle shape for the neck of the bunny.

Cover the whole bunny in vanilla buttercream.

Trim the cardboard to fit the bunny.

Place the edible green grass on a platter.

Gently place coconut on the sides, covering all the sides of the cake.

Place the bunny on the platter.

Sprinkle a little more shredded coconut on top of the bunny till bunny looks full.

Using scissors, cut out the bunny ears from the template.

Place the larger ear on the beige construction paper, trace the pattern, and cut it out. Then cut out the smaller ear on the pink paper.

Using a glue stick, glue the light pink smaller ear onto the beige.

Add the ears on the bunny.

Place the pink or red gummy on the front for a nose.
