Cream Cheese Minty Lime Mints


8 oz cream cheese (soft)

1/4 cup butter (soft)

2 lb. powder sugar

1-2 tsp mint extract

1 zest of a lime

2 tsp lime juice

4 different food colors


In a Kitchen Aid, cream the cream cheese and butter till smooth.

Add 1 cup of powder sugar. Blend.

Add the mint extract. Blend till incorporated.

Add the rest of the powder sugar. Blend.

Zest the whole lime and add the juice.

Blend till incorporated.

Divide into 4 bowls and add the food color to each bowl and stir till combined.

Cover and refrigerate for 2 hours or until firm enough to handle. (you don’t want it sticking to your hands)

On a cookie sheet lined with parchment paper, sprinkle with powder sugar.

Using your hands roll 1 inch balls then place on the cookie sheet.

Gently press down with a fork to leave an imprint..

Leave them out at room temperature for 4 hours till they firm up.

Flip over and let stand again until firm.

Store in an air tight container.
